Fresh cheese with creamy flesh, small holes and medium ripening, made from cow’s and sheep’s milk 100% Italian.

INGREDIENTS: Pasteurised cow’s milk, pasteurized sheep’s milk, tuber aestivum (min. 2%), salt, rennet, selected enzymes. Free from preservatives, EDIBLE CRUST.

USAGE INSTRUCTIONS: For an optimal taste, remove from the fridge and keep at room temperature for a few hours before consuming.

Gastronomic Combinations

If fresh, it can be eaten by the slice or used as an ingredient for recipes with melted cheese. Excellent grilled on homemade bread or finely sliced as a garnish for baked pasta dishes, risottos, eggs, carpaccio, bresaola, fondue, pizzas. It forms perfect food duos also with “crescia” or grilled vegetables, it is ideal with omelettes and some flakes of the Tufino, right before serving, help meat dishes to develop a richer flavour. Adding chopped Tufino before serving makes your polenta delicious and creamy. Once aged, the Tufino is excellent grated on the pasta, preferably white pasta which allows the truffle to express at the best its smell and taste. It is an ideal match for straw yellow white wines, characterized by an intense flavour and a good persistence of light scents of bananas and exotic fruits.
